What Is Nisin?

Nisin (CAS No.1414-45-5) is a natural bacteriocin antibacterial substance produced via milk medium fermentation of Lactococcus lactis strains. It targets and inhibits most Gram-positive bacteria and heat-resistant spores including Bacillus and Clostridium, with no inhibitory effect on Gram-negative bacteria, yeast or moulds.
